The Sisterhood at Congregation Beth El asked me to present a cooking demonstration for Passover - three times! Complaints about Passover food are a frequent refrain - the added kosher restrictions for Passover plus the daunting challenge of cooking for two large seders - festive meals - seems to intimidate even confident cooks.
My advice is always three-fold:

People came to me for private lessons, which were customized for their particular needs.

- Cook from scratch - avoid all the prepackaged Passover mixes.
- Keep it simple - the larger the crowd, the simpler the meal.
- Don't cook too much - no one wants to eat leftovers all week.
